Varietal Composition:

  • Bitter apples: 10% (domain, red frequin)

  • Bitter-sweet apples: 55% (binet rouge, bisquet, bedan, christmas from the fields)

  • Sweet apples: 20% (hard red, sweet carrouges verret)

  • Sour apples: 15% (rambault, rené martin)

Fermentation:

  • In thermo-regulated stainless steel tanks

  • Cold control and racking

  • Filtration before bottling

  • Natural mousse in the bottle

  • Alcohol content: 5% vol.

Tasting notes

  • Color: Shiny gold. Fine bubbles

  • Nose: Vegetal, balsamic and animal, empyreumatic, woody

  • Palate: Refreshing attack dominated by its tannic character which structures and gives length to the product

Tasting advice

During a meal: Perfectly accompanies white meats, poultry and grilled meats, but also salads, cheese, fish and seafood.
