Blend of two thirds of apple juice before fermentation and one third of young calvados which then ages in oak barrels.
In 400L oak barrels with a low tannin content.
The Calvados stops the fermentation of the apple must and the blend is stable at 17,5°.
Length of Ageing:
18 to 24 months minimum in oak barrels.
Body: Dark amber.
Scent: Candied fruit.
Taste: Prune and red fruit. Nice balance between the alcoholic structure of Calvados and the roundness of the apples
As an aperitif: Serve chilled or on ice
During a meal: With melon, foie gras or desserts such as chocolate or apple based desserst.
For cocktails: perfect to add a hint of apple and a nice colour to your favourite cocktails.
For cooking: To reinvent sauces and add a smooth taste of apple.
