Stainless steel pneumatic press. The specificity of the “Cuvée Saint Georges” is that the apple pomace is left out for a strict minimum of two hours before pressing which creates a more amber colour thanks to apple oxidation and allows a higher development of aromas.

Sweet apples: 17% (rouge duret, coquerelle)
Tart apples: 8% (rambault, petit jaune)
