Bitter sweet apples: 58 % (Binet rouge, Saint Martin, Bergerie de

Villerville)

Sweet apples: 17 % (Rouge Duret, Coquerelle)

Tart apples: 8 % (Rambault, Petit jaune)

Fermentation:

• In thermostatically controlled stainless steel vats

• Cold control and racking

• Filtered before bottling

• Natural in-bottle second fermentation

• Density at bottling: 1024

• Alcohol content: 4 %

About the product:

Body: Shiny golden colour, fine bubbles.

Scent: Rich and fruity, woody, resinous and smoky.

Taste: Fruity, mellow and structured cider with a tannic base and a low acidity, as required for a

typical AOC Pays d'Auge cider.

Serving suggestions:

Aperitif: Serve chilled in a wine glass.

With a meal: Goes well with poultry, white meat in creamy sauces, salads, Normandy cheeses or

apple deserts.
