Cuvée Saint Georges 2013
A.O.P. Pays d'Auge Cider, Medium Dry
Pressing:
Stainless steel pneumatic press. The specificity of the “Cuvée Saint Georges” is that the apple pomace is left out for a strict minimum of two hours before pressing which creates a more amber colour thanks to apple oxidation and allows a higher development of aromas.

Varietal composition:
Bitter apples: 17% (domaine, mettais)
Bitter sweet apples: 58% (binet rouge, saint martin, bergerie de villerville)
Sweet apples: 17% (rouge duret, coquerelle)
Tart apples: 8% (rambault, petit jaune)

Fermentation:
- In thermostatically controlled stainless steel vats 
- Cold control and racking
- Filtered before bottling 
- Natural in-bottle second fermentation
- Density at bottling: 1024
- Alcohol content: 4%

About the product:
Body: Shiny golden colour, fine bubbles
Scent: Rich and fruity, woody, resinous and smoky 
Taste: Fruity, mellow and structured cider with a tannic base and a low acidity, as required for a typical AOC Pays d'Auge cider.

Serving suggestions:
Aperitif: Serve chilled
With a meal: Goes well with poultry, white meat and cheese.
